AUTUMN FIVE-SPICE SQUASH ROLLS
I love the flavor combination of squash
and cinnamon, but sometimes it can
get a little, yup, boring. That in mind,
I thought I might try a refreshing new
twist by using Chinese five-spice powder
instead of cinnamon in my squash rolls.
Five-spice powder is comprised (
generally) of ground Szechuan peppercorn, star
anise, clove, cinnamon, and fennel seed.
This collection of spices covers all flavor
bases: sweet, sour, bitter, spicy, and even a
little salty. I love five-spice powder’s unique
spicy-licorice flavor but am careful to not
use it too liberally. It can be very pungent!
These are squishy, moist and fluffy. I love
them as dinner rolls, but they would make
for an amazing turkey (with cranberry
1/3 cup ( 2 5/8 ounces) water
2/3 cup ( 5 1/2 ounces) squash puree, canned
1 large egg
1 teaspoon salt
1/4 cup (1 7/8 ounces) packed brown sugar
2 tablespoons (1 ounce) unsalted butter
3/4 cup ( 3 ounces) King arthur Whole Wheat Flour
2 1/4 cups ( 9 ounces) King arthur unbleached
1 teaspoon five-spice powder
2 teaspoons instant yeast
Place all of the dough ingredients into the bread pan of your bread
machine in the order recommended by the manufacturer. Program for
dough or manual cycle and press start. Check the dough’s consistency
about 7 minutes after the kneading cycle begins, adding additional water or
flour to form a soft, slightly tacky, ball of dough.
When the cycle is complete, turn the dough out and divide it into 8 or 12 equal pieces.
Shape each piece into a small boule, or ball. Place the shaped rolls on a parchment-lined
baking sheet, about 2" apart. Cover the rolls with oiled plastic wrap and allow them to rise
in a warm place for about 40 to 50 minutes, or until nearly doubled in size. Bake the rolls
in the center of a preheated 350°F oven for 16 to 18 minutes, until lightly golden in color.
Remove from the oven and serve warm. Yield: 8 large or 12 dinner-sized rolls.
