rolling slice and bake cookies
With a sheet of parchment, some dough, and artfully applied leverage,
you can shape your cookies to be perfectly round with no fuss. This
technique works with flavored butters, too, if you want to roll them
and slice pretty disks.
1) Scoop your just-mixed dough down the length of a sheet of parchment, about 1 1/2" wide and 1 1/2" tall, roughly in the center.
2) Fold one edge of the parchment over the dough toward yourself.
Take a sturdy ruler (or the edge of a sheet pan) and put it up next to the

If you like, you can slit a paper towel core and plop your dough into
that to help it stay round while you chill and freeze it before slicing.
