The original title of this recipe was
“Spicy Apple Twists.” It had a somewhat different ingredient list, but as
we put it together to test and laid the
wrapped apples in the pan, we thought
they’d be great for a Halloween party,
because it looked like the slices were
wrapped up like little mummies.
Whatever you call them, they’re tasty
little treats, in a pan that makes its
own sauce as the pastries bake. All they
need to reach their full potential is a
splash of cream or a scoop of ice cream.
1 1/2 cups ( 6 3/8 ounces) King Arthur
Unbleached All-Purpose Flour
1/2 teaspoon salt
1/4 cup (1 5/8 ounces) shortening
1/4 cup (1/2 stick, 2 ounces) unsalted
4 to 5 tablespoons ( 2 to 2 1/2 ounces) cold
2 baking apples, peeled, cored, and
sliced into 8 wedges
1/4 cup (1/2 stick, 2 ounces) melted
1/2 cup ( 3 1/2 ounces) sugar
1 teaspoon cinnamon
1/2 cup ( 4 ounces) water
Preheat the oven to 450°F. Generously
butter a 9" x 13" pan.
FOR THE PASTRY: Whisk the flour and
salt together in a medium mixing bowl.
Cut in the shortening, then the butter,
leaving the butter in larger chunks.
Sprinkle cold water over the mixture,
stirring with fork until dough is just moist
enough to hold together. Transfer to a
piece of parchment or wax paper and
fold over 3 or 4 times, ending up with a
rectangular shape. Flatten to about 1/2"
thickness; smooth the edges. Wrap and
chill the dough while you peel, core, and
slice the apples.
TO ASSEMBLE: Roll the dough out onto
a floured surface to 16" x 10" rectangle.
Cut into sixteen 10" x 1" strips. Wrap one
strip around each apple slice. Arrange
in the prepared pan, making sure the
sides aren’t touching. Brush with melted
butter; sprinkle with mixture of sugar and
cinnamon. Pour 1/2 cup water over the
pastries. Bake for 25 to 30 minutes until
golden brown. Serve warm or cold, plain
or with cream. Yield: 16 pastries.
