1/4 cup ( 2 ounces) unsalted butter
1/2 cup ( 3 3/4 ounces) brown sugar
1/4 cup ( 2 3/8 ounces) pumpkin purèe
2 teaspoons pumpkin pie spice
2 teaspoons vanilla extract
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
2 cups ( 8 1/2 ounces) King Arthur Un-
bleached All-Purpose Flour
1/2 cup ( 2 ounces) dried cranberries,
1 1/4 cups ( 7 1/2 ounces) white chocolate
1/2 cup (1 7/8 ounces) pecans, optional
Preheat the oven to 350°F. Line a baking
sheet with parchment.
In a medium-sized bowl, beat the butter,
sugar, pumpkin purèe, pumpkin pie spice,
Beat in the eggs; the batter may look
slightly curdled. At low speed of your
mixer, add the flour, stirring until smooth;
the dough will be sticky. Blend in the
cranberries and pecans, if using, until
Plop the dough onto the prepared baking sheet. Divide it in half, and shape it
into two 9 1/2" x 2" logs, about 3/4" tall.
Straighten the logs and smooth their tops
and sides. Bake the dough for 25 minutes.
Remove from the oven. Spritz the dough
lightly with water to soften the crust.
Reduce the oven temperature to 325°F
while allowing the biscotti to cool for 5
Using a serrated knife, gently cut the log
crosswise into 1/2" to 3/4" slices. Set the
biscotti on edge on the prepared baking
sheet, leaving space between each
piece. Return them to the oven to bake
for 30 to 35 minutes, until they feel dry
and are beginning to turn golden. Remove
from the oven and cool the cookies
completely on a rack. When cool, dip 1/3
of each cookie into the melted chocolate.

Pumpkin is one of those quintessential flavors of the holiday season. We enjoy it in pies, breads, and even savory
